1 pound breakfast sausage (sage or spicy, your choice)

6 large eggs

2 cups milk

5 cups cubed day-old bread (preferably a rustic or sourdough)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

1 bell pepper (red or green), diced

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch casserole dish.

    In a large skillet over medium heat, cook the breakfast sausage, breaking it apart with a spatula until browned and cooked through, about 5-7 minutes. Remove from heat and set aside to cool slightly.

      In the same skillet, add a splash of olive oil and sauté the chopped onion and bell pepper until softened, about 3-5 minutes. Combine this with the cooked sausage and set aside.

        In a mixing bowl, whisk together the eggs and milk. Add garlic powder, dried thyme, salt, and pepper to the egg mixture. Set aside.

          In the greased casserole dish, layer the cubed bread evenly across the bottom. Then, sprinkle the sausage and vegetable mixture over the bread.

            Pour the egg and milk mixture over the bread and sausage, ensuring everything is evenly coated. Use a spatula to gently press down the bread to soak up the liquid.

              Top the casserole with the shredded cheddar and mozzarella cheese, spreading it evenly across the top.

                Bake in the preheated oven for 35-40 minutes, or until the casserole is set in the middle and the cheese is golden and bubbly. You can test for doneness by inserting a knife or toothpick into the center — it should come out clean.

                  Once done, remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh parsley if using before serving.
