1 ½ cups all-purpose flour

1 cup granulated sugar

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

2 large eggs

1 tablespoon vanilla extract

½ cup buttermilk (or milk with ½ tablespoon lemon juice)

1 cup mixed berries (blueberries, raspberries, and diced strawberries)

½ cup berry jam (for filling)

Optional: powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

      Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy using an electric mixer (about 2-3 minutes).

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.

          Combine Wet and Dry: Gradually add the dry mixture to the creamed butter mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined.

            Fold in Berries: Gently fold in the mixed berries with a spatula, being careful not to crush them.

              Fill Cupcake Liners: Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

                Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.

                  Cool: Remove from the oven and let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

                    Add Berry Filling: Once cooled, use a small knife or cupcake corer to remove a small circle from the center of each cupcake. Fill each cavity with about 1 teaspoon of berry jam.

                      Optional Dusting: For a finishing touch, lightly dust the tops of the cupcakes with powdered sugar.
