Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup buttermilk

1 cup mixed berries (fresh or frozen: strawberries, blueberries, raspberries)

Optional: Powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.

Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).

Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract. Mix until fully incorporated.

Combine Dry and Wet Ingredients: Gradually add the dry mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture. Mix until just combined; do not overmix.

Fold in Berries: Carefully fold in the mixed berries, ensuring they are evenly distributed without breaking them down too much.

Fill Cupcake Liners: Evenly distribute the batter into the prepared cupcake liners, filling each about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Dust with Sugar: Once cooled, dust the top of each cupcake with powdered sugar if desired for an elegant finish.

Prep Time: 15 mins | Total Time: 35 mins | Servings: 12 cupcakes

                        - Presentation Tips: Arrange the cupcakes on a decorative platter and garnish with a few whole berries on top for an appealing presentation. Optionally, you can add a sprig of mint for a fresh touch.
