2 cans young green jackfruit in water or brine, drained and rinsed

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

4 whole wheat sub rolls or hoagie buns

Optional toppings: sliced pickles, coleslaw, sliced jalapeños, or fresh cilantro

Prepare the Jackfruit: Begin by cutting the jackfruit into smaller pieces, removing any seed pods if necessary. The texture should resemble pulled meat.

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Jackfruit: Add the chopped jackfruit to the skillet, followed by the smoked paprika, cumin, chili powder, salt, and pepper. Stir well to incorporate the spices. Sauté for about 10 minutes, allowing the jackfruit to caramelize slightly.
