Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup vegan mayonnaise

1 tbsp Dijon mustard

1 tbsp soy sauce or tamari

1 tbsp lemon juice

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (adjust to taste)

1/4 cup diced celery

1/4 cup diced red onion

1/4 cup diced pickles or relish

Salt and pepper to taste

4 slices of whole-grain bread or gluten-free bread

Lettuce leaves, for serving

Tomato slices, for serving

Optional: avocado slices for added creaminess

Instructions
 

In a mixing bowl, use a fork or potato masher to mash the chickpeas until they are mostly broken down but still have some texture.

    Add the vegan mayonnaise, Dijon mustard, soy sauce, lemon juice, garlic powder, onion powder, smoked paprika, cayenne pepper, and a pinch of salt and pepper to the mashed chickpeas. Mix well until everything is fully combined.

      Fold in the diced celery, red onion, and pickles or relish. Taste and adjust the seasoning if needed, adding more salt, pepper, or cayenne for extra heat.

        Toast the slices of bread to your liking.

          Assemble the sandwich by spreading a generous amount of the chickpea salad onto two slices of bread. Top with lettuce, tomato slices, and avocado (if using).

            Cap with the remaining slices of bread, slice in half if desired, and serve immediately.
