1 cup canned jackfruit in water, drained and shredded

1 cup raw cashews, soaked for at least 2 hours and drained

1/4 cup nutritional yeast

2 tablespoons lemon juice

2 tablespoons vegan mayonnaise

1 tablespoon soy sauce or tamari

1 teaspoon Old Bay seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spiciness)

1/4 cup green onions, finely chopped

1/4 cup red bell pepper, finely diced

1/4 cup celery, finely diced

Salt and black pepper to taste

Fresh herbs (like parsley or cilantro) for garnish (optional)

Tortilla chips or veggies for serving

Instructions
 

Prepare the Cashew Base: In a high-speed blender or food processor, combine the soaked cashews, nutritional yeast, lemon juice, vegan mayonnaise, soy sauce, garlic powder, onion powder, and cayenne pepper. Blend until smooth and creamy. You may need to add a splash of water to achieve the desired consistency.

    Shred the Jackfruit: In a separate bowl, use your hands or a fork to shred the drained jackfruit until it resembles crab meat.

      Combine Ingredients: In a large mixing bowl, combine the creamy cashew base with the shredded jackfruit, chopped green onions, diced red bell pepper, and diced celery. Stir well until all the ingredients are fully incorporated.

        Season: Add the Old Bay seasoning, and season with salt and black pepper to taste. Mix until everything is evenly distributed. Adjust the seasoning as needed, adding more cayenne for heat if desired.

          Chill the Dip: Transfer the mixture to a serving dish and cover. Refrigerate for at least 30 minutes to allow the flavors to meld and the dip to chill.
