1 cup walnuts, finely chopped

2 cups mushrooms, finely chopped (cremini or button mushrooms work well)

1 small onion, diced

3 cloves garlic, minced

1 tablespoon soy sauce or tamari (for gluten-free)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

½ teaspoon red pepper flakes (optional, for heat)

1 tablespoon nutritional yeast (optional, for a cheesy flavor)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Walnuts: Preheat the oven to 350°F (175°C). Spread the chopped walnuts on a baking sheet and toast them in the oven for about 8-10 minutes, or until slightly golden and fragrant. Keep an eye on them to prevent burning. Remove from the oven and let cool.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent (about 5 minutes). Add the minced garlic and cook for an additional minute until fragrant.

      Cook the Mushrooms: Add the finely chopped mushrooms to the skillet. Cook for about 7-10 minutes until the mushrooms have released their moisture and become tender. Stir occasionally.

        Combine Ingredients: Reduce the heat to low. To the skillet, add the toasted walnuts, soy sauce, smoked paprika, dried thyme, oregano, black pepper, salt, red pepper flakes, and nutritional yeast (if using). Stir well to combine all the ingredients and cook for an additional 3-4 minutes, allowing the flavors to meld.

          Taste and Adjust: Taste the mixture and adjust the seasonings if necessary. If you prefer a richer flavor, you can add more soy sauce or a pinch of salt.
