1 cup grated carrots

1 cup corn kernels (fresh or frozen)

1/2 cup red bell pepper, finely diced

1/4 cup green onion, chopped

1/2 cup chickpea flour (besan)

1/2 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon cumin powder

Salt and pepper to taste

2 tablespoons fresh cilantro or parsley, chopped

Olive oil for frying

Instructions
 

In a large bowl, combine the grated zucchini, grated carrots, corn kernels, red bell pepper, and green onion. Mix well to ensure an even distribution of ingredients.

    In a separate bowl, whisk together the chickpea flour, baking powder, garlic powder, cumin powder, salt, and pepper.

      Gradually add the dry mixture to the vegetable mixture, stirring to combine. If the batter seems too thick, add a tablespoon of water to loosen it. Mix in the chopped cilantro or parsley.

        Heat olive oil in a non-stick frying pan over medium heat. Use about 1 tablespoon of oil for each fritter.

          Once the oil is hot, scoop about 2 tablespoons of the batter and gently drop it into the pan. Flatten it slightly with a spatula to create a round fritter. Repeat, leaving space between each fritter.

            Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes on the other side until cooked through. Remove the fritters and place them on a paper towel to absorb excess oil.

              Repeat with the remaining batter, adding more oil as necessary.

                Serve warm with a dipping sauce like yogurt or a spicy salsa for added flavor.
