Ingredients
  

225g unsalted butter, softened

100g icing sugar, sifted

200g plain flour

50g cornflour

1 teaspoon vanilla extract

50g rich tea biscuits, crushed (for added crunch)

100g raspberry jam (or any fruit jam of your choice)

50g dark chocolate (for drizzling)

A pinch of salt

Instructions
 

Preheat your oven to 180°C (355°F) and line a baking tray with parchment paper.

    In a large mixing bowl, beat the softened butter until creamy. Gradually add the icing sugar and continue to beat until light and fluffy.

      Mix in the vanilla extract and add a pinch of salt.

        Sift in the plain flour and cornflour into the butter mixture, then fold gently until fully combined.

          Lastly, stir in the crushed rich tea biscuits for a delightful crunch.

            Use a piping bag fitted with a star nozzle to pipe the mixture into swirls on the prepared baking tray, leaving space between each whirl.

              Bake in the preheated oven for 12-15 minutes or until lightly golden.

                Once baked, remove from the oven and let cool on a wire rack.

                  Once cooled, spread a small teaspoon of raspberry jam on the flat side of half of the cookies and top each with another cookie to form a sandwich.

                    For a finishing touch, melt the dark chocolate in a microwave-safe bowl in 20-second intervals until smooth. Drizzle the melted chocolate over the assembled whirls for decoration.

                      Allow the chocolate to set before serving.
