Ingredients
  

1.5 lbs chicken thighs, boneless and skinless, cut into bite-sized pieces

3 tablespoons vegetable oil

1/4 cup sugar

1/4 cup water

4 garlic cloves, minced

2-inch piece of ginger, peeled and finely sliced

1/4 cup fish sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon oyster sauce

1-2 red chilies, sliced (adjust to taste)

Fresh cilantro leaves, for garnish

Steamed jasmine rice, for serving

Instructions
 

Begin by marinating the chicken: In a bowl, combine the chicken pieces with fish sauce, soy sauce, and rice vinegar. Let it marinate for at least 30 minutes.

    Prepare the caramel sauce: In a heavy-bottomed pan, add sugar and water over medium heat. Stir gently until the sugar dissolves. Allow it to boil without stirring until it turns a deep amber color (about 5-7 minutes).

      Once the caramel reaches the desired color, carefully add the vegetable oil. The mixture will bubble vigorously. Stir to combine.

        Add the minced garlic and sliced ginger to the pan and sauté for about 1-2 minutes until fragrant.

          Add the marinated chicken to the caramel mixture. Stir well to coat the chicken evenly.

            Reduce heat to low, cover the pan, and let it simmer for about 15-20 minutes, stirring occasionally, until the chicken is cooked through and tender.

              If desired, add the oyster sauce and sliced red chilies in the last 5 minutes of cooking for an extra depth of flavor and spice.

                Taste and adjust seasoning, if necessary. Garnish with chopped cilantro leaves before serving.

                  Serve hot over steamed jasmine rice with an extra drizzle of the rich caramel sauce on top.
