Ingredients
  

1 cup cooked and shredded chicken

1 cup cooked shrimp, chopped

1/2 cup andouille sausage, diced

1/2 cup green onions, chopped

1/2 cup bell pepper, diced

1/2 cup slaw mix (cabbage and carrots)

3 cloves garlic, minced

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1 tablespoon Worcestershire sauce

1 package egg roll wrappers

Oil for frying

Hot sauce, for serving

Instructions
 

In a large skillet over medium heat, add a splash of oil. Sauté the garlic, green onions, and bell pepper until softened, about 3-4 minutes.

    Add the diced andouille sausage to the skillet and cook until browned, about 5 minutes.

      Stir in the shredded chicken, chopped shrimp, slaw mix, Cajun seasoning, smoked paprika, and Worcestershire sauce. Cook for an additional 4-5 minutes, mixing well until everything is heated through. Remove from heat and let cool slightly.

        Place an egg roll wrapper on a clean surface with a corner facing you. Spoon about 2-3 tablespoons of the filling onto the wrapper. Fold the bottom corner over the filling, then fold the sides in, and roll up tightly. Seal the edges with a little water.

          Repeat the process with the remaining wrappers and filling.

            Heat oil in a deep frying pan or fryer to 350°F (175°C). Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

              Serve hot with your favorite hot sauce for dipping.
