Ingredients
  

1 bag of frozen waffle fries (about 24 oz)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) black beans, drained and rinsed

1 cup diced tomatoes (fresh or canned)

1/2 cup sliced jalapeños (fresh or pickled)

1/2 cup sour cream

1/4 cup sliced green onions

1/4 cup fresh cilantro, chopped

1 avocado, diced (optional)

Olive oil

Salt and pepper to taste

Hot sauce (optional)

Instructions
 

Bake the Waffle Fries:

    Preheat your oven according to the package instructions of the waffle fries. Spread the frozen waffle fries on a baking sheet in a single layer. Drizzle with a little olive oil and season with salt and pepper. Bake until crispy and golden, usually around 20-25 minutes, flipping halfway.

      Prepare the Toppings:

        While the fries are baking, prepare your nacho toppings. In a medium bowl, mix together the black beans, diced tomatoes, and jalapeños. Season with a pinch of salt and pepper.

          Layer the Nachos:

            Once the waffle fries are crispy, remove them from the oven. Lower the oven temperature slightly (to around 350°F or 175°C). On a large serving platter or baking sheet, layer the waffle fries evenly. Sprinkle half of the cheddar and half of the Monterey Jack cheese over the fries.

              Add the Ingredients:

                Spoon the black bean mixture over the cheese-covered waffle fries. Then sprinkle the remaining cheddar and Monterey Jack cheese on top.

                  Bake the Nachos:

                    Return the platter to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.

                      Garnish:

                        Once out of the oven, immediately dollop sour cream in various spots, and top with sliced green onions, chopped cilantro, and diced avocado if using.

                          Serve:
