1 medium onion, diced

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

2 tablespoons tomato paste

1 cup vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

3 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

12 oz spaghetti or your favorite pasta

Instructions
 

Heat the olive oil in a large skillet or saucepan over medium heat.

    Add the diced onions, carrots, and celery, sauté for about 5-7 minutes until soft and translucent.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the finely chopped walnuts to the pan, stirring to combine, and cook for another 3-4 minutes to toast the nuts slightly.

          Mix in the crushed tomatoes, tomato paste, vegetable broth, oregano, basil, and red pepper flakes. Season with salt and pepper to taste.

            Bring the mixture to a simmer, then reduce the heat to low and let it cook for about 25-30 minutes, stirring occasionally until the sauce thickens.

              While the sauce is cooking, bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside.

                Serve the walnut bolognese sauce over the cooked spaghetti and toss gently to combine.
