Ingredients

4 cups watermelon, cubed and chilled

1 cup feta cheese, crumbled

1/2 cup fresh mint leaves, chopped

1/4 red onion, thinly sliced

1/4 cup balsamic glaze

2 tablespoons olive oil

Salt and pepper to taste

1/4 cup toasted pine nuts (optional)

Instructions

Start by preparing the watermelon. Select a seedless watermelon for this salad, and cut it into bite-sized cubes. Chill the watermelon in the refrigerator for about 30 minutes before serving for a refreshing taste.

In a large mixing bowl, add the chilled watermelon cubes.

Gently fold in the crumbled feta cheese and chopped mint leaves to the bowl with the watermelon.

Add the thinly sliced red onion, ensuring it's evenly distributed among the other ingredients.

Drizzle the olive oil over the watermelon mixture, then follow with the balsamic glaze to give it a delicious tang.

Season with salt and pepper to taste. Be careful with the salt since feta cheese can be salty as well.

If you're using toasted pine nuts, sprinkle them over the salad at this stage for added crunch and flavor.

Gently toss the ingredients together until well combined, taking care not to mash the watermelon or feta.

Serve immediately for the best texture and flavor.

                    Prep Time: 15 min | Total Time: 45 min | Servings: 4

                      - Presentation Tips: Serve the salad in a large, shallow bowl and drizzle with additional balsamic glaze for an eye-catching finish. Garnish with whole mint leaves for a pop of color and freshness.
