1 lb bacon, chopped

1 medium white onion, diced

4 cloves garlic, minced

1/2 cup packed brown sugar

1/2 cup apple cider vinegar

1/2 cup maple syrup

1/4 cup whiskey (non-alcoholic alternative: use extra apple cider)

1 teaspoon black pepper

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional)

Instructions
 

In a large skillet over medium heat, cook the chopped bacon until crispy, about 10-12 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate and drain all but 1 tablespoon of the bacon grease from the skillet.

    In the same skillet, add the diced onion and sauté until translucent, about 5 minutes. Add in the minced garlic and sauté for another 1-2 minutes until fragrant.

      Return the bacon to the skillet and stir in the brown sugar, apple cider vinegar, maple syrup, and whiskey (or apple cider). Mix until well combined.

        Lower the heat and simmer the mixture, stirring occasionally, until it thickens to a jam-like consistency (about 20-25 minutes). If it gets too thick, you can add a tablespoon or two of water to achieve your desired consistency.

          Once the jam has thickened, stir in the black pepper, smoked paprika, cayenne pepper (if using), and salt to taste.

            Remove the skillet from the heat and let it cool slightly before transferring to a jar. Allow it to cool completely at room temperature before sealing the jar and storing in the refrigerator.
