Ingredients

2 boneless, skinless chicken breasts

8 ounces of penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 ½ cups white cheddar cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions

Begin by cooking the penne pasta according to the package instructions until al dente. Drain and set aside, reserving a bit of pasta water.

Meanwhile, season the chicken breasts with salt, pepper, garlic powder, and onion powder.

In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the middle. Remove from the skillet and let rest for a few minutes. Slice the chicken into thin strips.

In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.

Pour in the chicken broth and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.

Stir in the heavy cream and allow it to simmer for about 2-3 minutes until slightly thickened.

Gradually add the shredded white cheddar cheese, stirring until melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

Add the cooked penne pasta and sliced chicken back into the skillet. Toss everything together until well coated with the white cheddar sauce.

Taste and adjust the seasoning with additional salt and pepper if needed.
