Ingredients
  

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 green bell pepper, diced

2 cans (15 oz each) white beans (cannellini or great northern), rinsed and drained

1 can (4 oz) diced green chilies

4 cups low-sodium chicken broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried oregano

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

1 lime, juiced

Optional toppings: shredded cheese, avocado slices, and additional cilantro

Instructions
 

Cook the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Cook for about 6-7 minutes on each side until browned and cooked through. Remove from the pot and set aside to cool, then shred the chicken into bite-sized pieces.

    Sauté the Vegetables: In the same pot, add diced onion, garlic, and green bell pepper. Sauté for about 5 minutes until the onion is translucent.

      Add Spices and Beans: Stir in the cumin, smoked paprika, cayenne pepper, and oregano. Add the rinsed white beans, diced green chilies, and corn to the pot, mixing well.

        Simmer the Chili: Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and allow it to simmer for about 20 minutes, stirring occasionally. This will help to meld the flavors together.

          Combine Chicken and Cream: Add the shredded chicken back into the pot. Stir in the sour cream, lime juice, and chopped cilantro. Taste and adjust seasoning with salt and pepper as needed. Let it heat through for another 5-10 minutes.

            Serve: Ladle the chili into bowls and top with optional toppings like shredded cheese, avocado slices, and additional cilantro if desired.
