1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup fresh raspberries, mashed

1 cup white chocolate chips

1 tablespoon coconut oil

1/4 cup crushed graham crackers (for coating)

Extra raspberries and white chocolate shavings (for garnish, optional)

Instructions
 

Prepare the Cheesecake Mixture:

    In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix with a hand mixer on medium speed until smooth and creamy.

      Incorporate Raspberries:

        Add the mashed raspberries into the cream cheese mixture and gently fold until evenly distributed. Be careful not to over-mix, as you want to keep some raspberry chunks for texture.

          Form the Balls:

            Using a small cookie scoop or your hands, portion out the mixture and roll it into bite-sized balls (about 1 inch in diameter). Place the balls on a parchment-lined baking sheet. Once done, refrigerate for about 30 minutes to firm up.

              Melt the Chocolate:

                In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Heat in the microwave in 30-second increments, stirring in between, until completely melted and smooth.

                  Coat the Cheesecake Balls:

                    Remove the chilled cheesecake balls from the refrigerator. Dip each ball into the melted white chocolate, allowing the excess to drip off. Before the chocolate sets, roll them in crushed graham crackers to coat. Place back onto the parchment-lined baking sheet.

                      Chill and Serve:

                        Return the coated cheesecake balls to the refrigerator for at least 15 minutes to set. Once firm, garnish with extra raspberries and white chocolate shavings if desired.
