1/2 cup powdered sugar

1 tsp vanilla extract

1/2 cup crushed graham crackers

1/2 cup fresh raspberries (plus more for garnish)

1 cup white chocolate chips

1 tsp coconut oil (optional for melting)

Prepare the Cheesecake Mixture: In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and a pinch of salt. Beat on medium speed until the mixture is smooth and creamy.

    Add Raspberries: Gently fold in the crushed raspberries and graham cracker crumbs until well incorporated. Be careful not to mash the raspberries too much to maintain their texture.

      Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 1-2 hours, or until it is firm enough to handle.

        Form the Balls: Once the mixture is chilled, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter). Place the balls on a parchment-lined baking sheet.

          Melt the White Chocolate: In a microwave-safe bowl, combine the white chocolate chips with coconut oil (if using) and heat in the microwave in 30-second intervals, stirring in between until melted and smooth.

            Coat the Cheesecake Balls: Dip each cheesecake ball into the melted white chocolate, ensuring it's fully coated. Use a fork to lift it out, letting any excess chocolate drip off, then place the coated ball back onto the parchment paper.
