In a large mixing bowl, combine the orange juice, lemon juice, lime juice, and the zests from all three citrus fruits. Whisk in the olive oil until well combined to create the dressing.
Add the cooled quinoa to the bowl with the citrus dressing and mix until the quinoa is well coated.
Stir in the cherry tomatoes, cucumber, chickpeas, red onion, parsley, and mint. Gently toss everything together until evenly mixed.
Season with salt and pepper to taste and mix again. Let the salad sit for at least 15 minutes to allow the flavors to meld.
Serve chilled or at room temperature, garnishing with additional herbs if desired.
