Ingredients
  

2 cups grated zucchini (about 2 medium zucchinis)

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

3 large eggs

1 tsp vanilla extract

1 tsp lemon zest (freshly grated)

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup chopped walnuts or pecans (optional)

1/2 cup white or dark chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

    In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well combined.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.

        In another bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.

          Gradually incorporate the dry ingredients into the wet mixture, stirring just until combined. Do not overmix.

            Gently fold in the grated zucchini, nuts, and chocolate chips, if using.

              Pour the batter into the prepared loaf pan and smooth the top with a spatula.

                Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                  Remove from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
