Zucchini Lasagna with Ground Turkey

3 medium zucchinis, sliced lengthwise into 1/4-inch thick strips

1 pound ground turkey

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) crushed tomatoes

2 cups ricotta cheese

1 large egg

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Begin by slicing the zucchinis. Sprinkle salt on both sides and let them sit for about 15 minutes to draw out moisture. Pat dry with paper towels.

      In a large skillet over medium heat, cook the ground turkey with the diced onion and minced garlic until the turkey is browned and cooked through. Drain any excess fat.

        Add the crushed tomatoes, dried basil, oregano, salt, and pepper to the skillet. Let simmer for 10 minutes, stirring occasionally.

          In a separate bowl, mix the ricotta cheese, egg, and half of the grated Parmesan cheese. Season with salt and pepper.

            Assemble the lasagna in a 9x13 inch baking dish. Start with a layer of the turkey sauce, followed by layers of zucchini slices, and then a layer of the ricotta mixture. Repeat this process until all ingredients are used, finishing with a layer of turkey sauce on top.

              Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top layer.

                Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and golden brown.

                  Allow the lasagna to cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired.
