4 medium zucchinis, chopped

1 medium onion, diced

3 cloves garlic, minced

1 medium potato, peeled and diced

4 cups vegetable broth

1 cup coconut milk

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the chopped zucchinis and diced potato to the pot and stir to combine. Sauté for about 5 minutes, allowing the vegetables to soften slightly.

        Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer uncovered for about 15 minutes, until the potatoes and zucchinis are tender.

          Remove the pot from heat and allow the soup to cool slightly. Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer it to a blender in batches.

            Return the blended soup to the pot and stir in the coconut milk, dried thyme, smoked paprika, salt, and pepper. Heat over low heat until warmed through, about 5 minutes.

              Taste and adjust seasoning if necessary.

                Serve hot, garnished with fresh basil leaves for a burst of color and flavor.
