Ingredients
  

1 pound Italian sausage (mild or spicy, your choice)

1 large onion, chopped

3 cloves garlic, minced

5 cups chicken broth

3 large potatoes, thinly sliced

1 cup heavy cream

2 cups kale, stems removed and torn into bite-sized pieces

1 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Olive oil for sautéing

Grated Parmesan cheese for serving

Instructions
 

In a large pot, heat a splash of olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon as it cooks. Sauté until browned and cooked through, about 5-7 minutes.

    Add the chopped onion and garlic to the pot and sauté for another 3-5 minutes until the onion is translucent and fragrant.

      Pour in the chicken broth and bring the mixture to a boil.

        Once boiling, add the sliced potatoes, reduce the heat to medium-low, and simmer until the potatoes are tender, about 10-15 minutes.

          Stir in the heavy cream, kale, and crushed red pepper flakes (if using). Continue to simmer for another 5 minutes until the kale is wilted and tender.

            Season with salt and pepper to taste. Adjust the seasoning as needed to enhance the flavors.

              Serve the soup hot, garnished with grated Parmesan cheese to taste.
