4 large sweet bell peppers (any color)

2 cups shredded cooked chicken (rotisserie chicken works great)

8 oz cream cheese, softened

1/2 cup buffalo wing sauce (adjust to taste)

1/2 cup ranch dressing

1 cup shredded cheddar cheese

1/2 cup crumbled blue cheese (optional)

2 green onions, chopped (for garnish)

Salt and pepper, to taste

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prep the Peppers: Cut the tops off the sweet bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.

      Mix the Filling: In a large mixing bowl, combine the shredded cooked chicken, softened cream cheese, buffalo wing sauce, ranch dressing, half of the shredded cheddar cheese, and blue cheese (if using). Mix well until all ingredients are thoroughly combined. Season with salt and pepper according to your taste.

        Stuff the Peppers: Spoon the buffalo chicken mixture into each prepared bell pepper, packing it down gently to ensure you fill them well.

          Top with Cheese: Sprinkle the remaining shredded cheddar cheese over the tops of the stuffed peppers.
