1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/4 cup chopped fresh parsley

1 egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup marinara sauce (for dipping)

Optional: 1/2 cup diced bell peppers for extra flavor

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a medium bowl, combine the shredded mozzarella cheese and any additional diced bell peppers if using. Set aside.

      Mix the Meat: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until just combined—do not overmix.

        Form the Bites: With your hands, take a small amount of the meat mixture (about the size of a golf ball), flatten it in the palm of your hand, and place about a teaspoon of the cheese mixture in the center. Carefully fold the meat around the cheese and shape it into a ball. Repeat with the remaining meat mixture and filling.

          Bake: Place the meatloaf bites on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes or until the meat is cooked through and reaches an internal temperature of 160°F (70°C).

            Serve: Remove the bites from the oven and let them cool for a few minutes. Serve with warm marinara sauce for dipping.
