4 slices of ciabatta or focaccia bread

8 ounces fresh mozzarella cheese, sliced

2 medium tomatoes, sliced

1 cup fresh basil leaves

2 tablespoons balsamic glaze

2 tablespoons olive oil

Salt and freshly cracked black pepper to taste

Preheat a panini press or a grill pan over medium heat. If using a grill pan, you will also need a heavy skillet to press down on the sandwich.

    Drizzle olive oil on one side of each slice of ciabatta or focaccia. Lay the slices oil-side down on a clean surface.

      On two slices of bread, layer the fresh mozzarella, tomato slices, and a generous handful of fresh basil leaves.

        Drizzle balsamic glaze over the layers and sprinkle with salt and freshly cracked black pepper to taste.

          Top with the remaining slices of bread, oil-side up, creating two complete sandwiches.

            Place the sandwiches on the preheated panini press or grill pan. If using a grill pan, carefully place the heavy skillet on top of the sandwiches to press them down.

              Cook for about 3-5 minutes, or until the bread is golden brown and crispy, and the cheese is melted.

                Remove the panini from heat and allow them to cool for a minute before cutting them in half.
