4 hot dogs

4 slices of bread (your choice, such as sourdough or whole wheat)

1 cup shredded cheddar cheese (or your favorite cheese mix)

2 tablespoons butter

1 tablespoon mayonnaise

1 teaspoon garlic powder

1 teaspoon paprika

Optional toppings: pickles, ketchup, mustard, or jalapeños

Prepare the Hot Dogs: Start by preheating your grill or grill pan over medium heat. Grill the hot dogs for about 5-7 minutes, turning occasionally until they are heated through and have some nice grill marks. Remove them from the grill and set aside.

    Prepare the Bread: In a small bowl, combine the mayonnaise, garlic powder, and paprika. Spread this mixture evenly on one side of each slice of bread.

      Assemble the Sandwiches: On the non-spread side of two slices of bread, place an even layer of shredded cheese (about 1/4 cup) on each. Then, place one grilled hot dog in the center of each slice of bread with cheese, and top it with another 1/4 cup of cheese.

        Close the Sandwiches: Top each assembly with the other slice of bread, spread side facing out.

          Grill the Sandwiches: In the same pan or on the grill, melt 1 tablespoon of butter over medium heat. Carefully place one sandwich in the pan. Grill for about 4-5 minutes until the bread is golden brown and crispy, and the cheese has started to melt. Flip the sandwich carefully, adding the remaining butter if needed, and grill the other side for another 4-5 minutes.

            Serve: Once both sides are golden brown and the cheese is melted, remove the grilled cheese hot dogs from the pan. Slice them in half if desired and serve with your choice of toppings.
