4 boneless, skinless chicken thighs

1 cup Guinness stout

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons brown sugar

3 tablespoons soy sauce

1 tablespoon Dijon mustard

2 teaspoons dried thyme

1 teaspoon black pepper

2 tablespoons olive oil

Salt to taste

Chopped fresh parsley (for garnish)

Marinate the Chicken: In a large bowl, combine the Guinness stout, brown sugar, soy sauce, Dijon mustard, dried thyme, and black pepper. Place the chicken thighs into the marinade and cover. Let marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until they become translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook the Chicken: Remove the chicken from the marinade (keeping the marinade) and season lightly with salt. Increase the heat to medium-high and add the chicken thighs to the skillet. Sear for about 5 minutes on each side until they are browned.

        Create the Sauce: Pour the reserved marinade into the skillet with the chicken. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

          Finish and Serve: Once cooked, remove the chicken from the skillet and let it rest for a few minutes. Drizzle the reduced sauce over the chicken and garnish with chopped fresh parsley before serving.
