1 lb sirloin steak, cut into bite-sized cubes

2 tablespoons olive oil

Salt and pepper, to taste

4 tablespoons unsalted butter

4 cloves garlic, minced

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

2 teaspoons fresh parsley, chopped

1 lb russet potatoes, peeled and cubed

½ cup heavy cream

1 cup shredded cheddar cheese

2 tablespoons sour cream

1 teaspoon garlic powder

Fresh chives, for garnish

Prepare the Steak Bites: Season the cubed steak with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steak bites in a single layer (you may need to do this in batches) and sear for about 3-4 minutes until browned on all sides. Remove the steak from the skillet and set aside.

    Make the Garlic and Herb Butter: In the same skillet over medium heat, add the butter. Once melted, add the minced garlic, rosemary, thyme, and parsley. Sauté for about 1-2 minutes until fragrant. Return the steak bites to the skillet and toss everything together, cooking for an additional 2-3 minutes until the steak is cooked to your desired doneness. Remove from heat.

      Prepare the Mashed Potatoes: While the steak is cooking, bring a pot of salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

        Mash the Potatoes: Add the heavy cream, shredded cheddar cheese, sour cream, garlic powder, salt, and pepper to the pot with the drained potatoes. Mash until smooth and creamy, adjusting the seasoning as needed.
