1 pound large shrimp, peeled and deveined

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

2 tablespoons Dijon mustard

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the panko breadcrumbs, grated Parmesan cheese, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well and set aside.

      In another bowl, whisk together the eggs and Dijon mustard until smooth.

        Dip each shrimp into the egg mixture, then dredge in the panko mixture, pressing gently to ensure an even coating.

          Arrange the breaded shrimp in a single layer on the prepared baking sheet. Drizzle olive oil over the shrimp for added crispiness.

            Bake in the preheated oven for 12-15 minutes, or until the shrimp are golden brown and crispy.

              Remove from the oven and let them rest for a couple of minutes. Garnish with freshly chopped parsley before serving.
