4 large russet potatoes, thinly sliced

1 cup smoked sausage, sliced into rounds

2 cups shredded sharp cheddar cheese

1 cup heavy cream

1 cup whole milk

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons butter

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter.

    In a large skillet over medium heat, melt the butter. Add the diced onion and minced garlic, and sauté until softened, about 3-4 minutes.

      Stir in the sliced smoked sausage and cook until slightly browned, around 5-6 minutes. Set aside.

        In a mixing bowl, whisk together the heavy cream, whole milk, dried thyme, paprika, salt, and pepper.

          Layer half of the sliced potatoes in the bottom of the prepared baking dish. Pour half of the cream mixture over the potatoes, then sprinkle with half of the sautéed sausage and onion mix, followed by a layer of 1 cup of shredded cheddar cheese.

            Repeat the layers with the remaining potatoes, cream mixture, sausage, onion, and top with the remaining cheddar cheese.

              Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

                After 45 minutes, remove the foil and sprinkle the grated Parmesan cheese over the top. Bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown, and the potatoes are tender when pierced with a fork.

                  Remove from the oven and let it cool for 5-10 minutes before serving.
