12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup bell peppers, diced (mix of red and yellow for color)

1 cup cucumber, diced

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup red onion, finely chopped

1/4 cup fresh basil, chopped

1/4 cup balsamic vinaigrette

2 tablespoons olive oil

Salt and pepper to taste

Instructions
 

Cook the tortellini according to package instructions. Drain and rinse under cold water to stop the cooking process.

    In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, diced bell peppers, diced cucumber, sliced black olives, crumbled feta cheese, and chopped red onion.

      In a small bowl, whisk together the balsamic vinaigrette, olive oil, salt, and pepper. Adjust seasoning according to taste.

        Pour the vinaigrette over the tortellini salad and gently toss to coat all ingredients evenly.
