Ingredients
  

1 lb boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 (15 oz) cans white beans (such as Great Northern), drained and rinsed

4 cups chicken broth

2 cups corn (fresh, frozen, or canned)

1 (4 oz) can diced green chiles

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup heavy cream or half-and-half

Fresh cilantro, for garnish

Sliced jalapeños, for garnish

Lime wedges, for serving

Instructions
 

In a large pot over medium heat, add the olive oil. Once hot, add the diced chicken and season with salt and pepper. Sauté for about 5-7 minutes, or until the chicken is cooked through. Remove the chicken from the pot and set aside.

    In the same pot, add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Stir in the white beans, chicken broth, corn, diced green chiles, cumin, chili powder, smoked paprika, and the cooked chicken. Bring the mixture to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld.

        Reduce the heat to low and slowly stir in the heavy cream (or half-and-half). Allow the chili to warm through, but do not let it boil.

          Adjust seasoning with additional salt and pepper, if necessary. Serve hot, garnished with fresh cilantro, sliced jalapeños, and lime wedges on the side for added brightness.
